Gas-ghouls are undead creatures found only in the Pyramid. When hit, they release a cloud of dangerous gas - randomly either mustard gad, poison gas, acid gas or flaming gas. Most hits will only make a small cloud at the ghoul's square, but landing a critical hit will create a larger cloud that may envelop you if you're standing in melee range.
Their gassy power notwithstanding, gas-ghouls are basically just zombies, so not particularly dangerous. If you have Gas Immunity, you can kill them without trouble.
