Food decay and lowered stats.

How can you tell how rotten food is? Why do some of my stats have a higher number written in grey next to them? I am only wearing troll leather stuff and not carrying a lot, have full health, and am neither satiated nor hungry.

Rotten food will eventually have flies start to buzz around it. Fewer at first and then more the worse it gets. It will slightly rot before any flies appear but is still safe to eat then.
For the stats that means that the base stat has either been increased or decreased artificially/temporarily for some reason. Without a screenshot or more info we couldn't tell you why though.

Simply put, dexterity and agility are lowered if the equipment you're wearing is not flexible enough for your current score. The penalty varies by material, equipment type, equipment slot and your current stats. Troll hide for instance is very stiff, which limits your movement especially when used for things like cloaks. The two other ways the gray number appears is either by using equipment that boosts your stats, or by sustaining debilitating injuries (greyed out) to a limb or your head.
