What exactly does eating a can of mushroom do? What are its guaranteed effects and what are its chance effects?
Also, if you pickaxe a giant mushroom corpse, does this create mushroom flesh with the same effect as a can? (Or does it have to be magic mushroom, or does neither work?)

A can of mushroom is the same as a can of banana flesh -- it's contents are giant mushroom flesh, the same as you'd eat if you found a corpse.

So what's the effect of eating giant mushrooms?

I would assume tripping balls would be a side effect.

I eat mushrooms on regular basis - the most common side effects include: confusion, ESP, flight, slowdown, haste, and perhaps invisibility.

I didn't really notice difference between regular and magic mushrooms, but I tend to avoid eating the latter.

I am a mycophage (look it up). The giant mushrooms are safe to eat in that they will not cause you to polymorph unlike the magic mushrooms. I did get perma confused once by eating to many giant shrooms.

Yeah, the polymorph is the most dangerous part of magic mushrooms. They'll also cause teleportitis, which is a minor nuisance without control. I forget though -- do magic shrooms grant the control stati?

I think you can get it from eating the magic shrooms but you can definitely get it from the magic vapours.
